In 1811, Chevreul began his research on animal fats, which revolutionized chemistry and, to a certain extent, founded organic chemistry. He discovered that organic matter obeys the same laws as mineral compounds. While analyzing a soap made from pork fat, he discovered a large number of fatty acids. He was then able to describe soap formation and developed methods for investigating organic chemistry through fractionation.
